Australia

DAY ONE

Starting no later than 7.30 am to avoid the traffic, we're straight off to Australia's own Grand Canyon for a eventful day packed with close encounters, vistas and walks.

Having crossed the Sydney Harbour Bridge, we'll get close and personal with koalas, emus, quokkas, echidnas and little penguins at the award-winning Featherdale Wildlife Park.

Then it is time for our circuit hike (app. 1-2 hours, pending on guests' agility and the weather) along the Jamison Valley to discover waterfalls, magnificent canyons, eucalyptus and rainforests and an abundance of local birds.

The true beauty of the Jamison speaks for itself at the famous Three Sisters.

After an Aussie picnic at our secret hideaway (far from any tourist canteen), we descent halfway down the remote Grose Valley for spectaculair and interrupted vistas over Mount Banks, the Bridal Veil Falls and Pulpit Rock.

In the afternoon, we'll enjoy the country atmosphere (and see wild kangaroos) of Hartley Vale Valley and the scenic Bells Line or Road before settling in our comfortable hotel of the night in the Hawkesbury, near the historic Macquarie town of Windsor.

Accommodation: The Hawkesbury Crown Plaza Resort

DAY TWO

After a hearty breakfast at our hotel, we'll be meandering our way through NSW fruit growing region, the Hawkesbury and the breathtaking Wollemi and Yengo wilderness via the scenic Putty Road.

Not without stopping for morning coffee at a remote bush cafe.

We'll arrive in time into Hunter wine country for a visit of three 5 star boutique wineries to sample some of the Hunter best Semillon and Shiraz wines. Each winery represents the best of the Hunter Valley wine regions Broke, Mount View and Pokolbin.

After a gourmet 2 course lunch with matching wines, and a cheese tasting at the Hunter Valley Cheese Factory it is time to relax at the resort between the vineyards.

Accommodation: The Hunter Valley Resor

DAY THREE

After breakfast, we head for Anna Bay at Port Stephens.

Here we'll board a 4WD for a short but adventurous beach tour along the sand dunes of Stockton Beach, an incredible Eco-system stretching from Newcastle 32kms north to Anna Bay.

A spot of sand boarding down the impressive sand dunes awaits us.

Working up an appetite is a refreshing hike up to the Head Summit of Tomaree NP. This magnificent backdrop to the coastal towns and villages of Nelson Bay, Shoal Bay, Boat Harbour and Anna Bay is the only place in NSW where you can see outcrops of the acid volcanic rock rhyodacite.

From Tomaree Head Summit you'll enjoy gorgeous views over Port Stephens, the coast and Broughton, Cabbage Tree and Boondelbah islands nature reserves. Keep your eyes out for koalas dozing high in the trees !

After a seafood lunch, we'll board the dolphin watching vessel and watch as the dolphins play on the bow waves.

During summer, some may even like to swim in the boom nets off the back of the boat and get personal with our resident bottlenose marine mammals.
